Cooking Corner – Cherry Surprise Cookies

These cookies may look normal, but on the inside is a surprise. You may have guessed it though. Each week, Mom, Daniel and I bring 72 homemade cookies to our youth group. These cookies were one of my favorites. I think you will love them.

Cookies:

½ cup butter

1 cup sugar

1 egg

1 ½ tsp vanilla

1 ½ cup flour

½ cup cocoa

¼ tsp salt

¼ tsp baking soda

1 10 oz jar small maraschino cherries

Frosting:

½ cup sweetened condensed milk

1 6 oz package chocolate chips

¼ tsp salt

1 ½ tsp cherry juice

Cream butter, sugar, egg and vanilla. Add remaining ingredients. Beat on low until dough ball forms. Shape into 1” balls. Put 2” apart on cookie sheet. Push cherry halfway into each ball. Melt chips, mix with milk over low heat. Add salt and cherry juice. Swirl 1 ½ tsp of frosting over each cherry. Bake at 350°F for 8-10 minutes. Enjoy!
